Central sterilizers are extensive devices that can disinfect 40 knives at the same time. They are ideal for kitchens where a large team works and in large food production plants.
The models offered clean tools at a temperature of 82-85°C. The water temperature is constantly measured by a thermometer installed inside the sterilizer. The whole thing is insulated, which allows to maintain a constant water temperature in it.
In order to be able to place knives in central sterilizers, special metal inserts are necessary. They hold 4 tools. A maximum of 10 knife baskets can be inserted into the device.
In slaughterhouses and butcher shops, saws and axes are often used instead of knives. They are needed for dividing bones and frozen meat. However, like other tools, they must be perfectly clean before use. Thanks to this, there is no risk of microorganisms spreading throughout the meat and leading to its contamination.
To disinfect them, reach for a vertical saw and axe sterilizer. It is mounted to the wall, so it does not take up free space in the room. The device heats the water to 82-85°C and maintains the appropriate temperature throughout the cleaning.
UV knife sterilizers are devices that eliminate bacteria with the help of emitted ultraviolet rays. Then the disinfection of tools takes place “dry”, without the use of water. Therefore, the accessories are not exposed to the influence of moisture. UV knife sterilizers are especially useful in places where the device cannot be connected to the water supply.
The radiation they emit is harmless to human health, provided that the door is closed. Therefore, you should be careful not to start the UV knife sterilizer before inserting all accessories and closing it. You should also not open the device before cleaning is complete. Direct exposure to UV rays can have a negative effect on the human body.
On the other hand, water knife sterilizers use hot water, which eliminates pathogens. Thanks to this, you can enjoy 100% disinfected tools. The liquid at high temperature reaches all corners. So you can be sure that the entire knife has been thoroughly cleaned.
